One base grain
We feature multiple base grains across all our beers, but most lagers only feature one grain. We try to build our malt character through technique. In Head Brewer Keith’s opinion, this makes for a less clunky lager.
Naturally carbonated
Our lagers are naturally carbonated. Spunding (say that ten times fast) is the process in which we do this. A spunding valve (shown above) attaches to tanks. To simplify a somewhat technical process we:
- Take a big batch of beer and ferment it out
- Move it back into the tank
- Put a small batch of beer into the tank while still in active fermentation
- Close the tank
- Pressurize it capturing natural carbonation
Fermented under 50 degrees
We ferment our lagers under 50 degrees. Lager yeasts prefer cooler temperatures (roughly 42-55 ℉). In fact, the word lager comes from the German word which means “to store”; once upon a time lagers were first stored in cool caves to mature.
